During the 2023 edition of the yearly JNS gathering I have purchased this very old stock Minamoto No Masakage wide 240mm Gyuto and modified it into a whole different kind of beast.

Maksim, theowner of www.japanesenaturalstones.com, had a batch of super Old stock Minamoto knives on his shelves, about 50+ years old, and they are not made anymore. I like a special catch like this.
It's a Mono steel Carbon knife. I do not know exactly what steel they are made of, but it is estimated to be about 60 HRC. It sharpens very well and gets super sharp .
Minamoto no Masakane was the oldest company that have made western knives in Japan with Japanese steel. First knives they made was about 180 years ago and was inspired by French chef knives.
