Corn Cakes (Ncauv Pob Kws)
Corn Cakes, so yummy!
It’s soft and chewy with a yummy sweet corn taste.
Ingredients:
2 lbs corn (thaw if frozen) (blended)
2 cups sugar (adjust to taste)
2 bags (16 oz each) glutinous rice flour
1 1/2 cups rice flour
1 tsp baking powder (optional-helps makes the corn cakes fluffy)
2 1/2 cups water (add more as needed)
*If you like more corn you can add 1-2 extra lbs and adjust the water amounts
*If you prefer a sticky chewier consistency add less rice flour such as 1/2 cup or none
