This recipe is a fusion of others. I was asked to use it for a Chinese food restaurant. The idea was to make it taste like orange, but different from other Chinese restaurants. Here's a step-by-step explanation.

Ingredients: CHICKEN
600 g diced chicken
2 cloves finely chopped garlic
1 clove finely chopped ginger
20 ml. of mirin wine
50 ml orange juice
Salt and pepper to taste
BATTERING
1 cup tempura flour
1 cup orange juice
½ cup cold water
ORANGE SAUCE:
¼ cup rice vinegar
2 garlic cloves
1 ginger clove
¼ cup brown sugar
1 cup orange juice
10 ml soy sauce
1 red jalapeño pepper
1 tablespoon cornstarch
2 tablespoons water

STEP 1: The Chicken
Cut the chicken into approximately 2 cm cubes.
I recommend using breast meat to avoid straining.
This size is ideal because we want a good aesthetic and also to be able to eat well in every bite.
MARINATING THE CHICKEN: 4 ingredients
2 cloves of finely chopped garlic
1 clove of finely chopped ginger
20 ml mirin wine
50 ml orange juice
Salt and pepper to taste
Add it to the chicken and mix well until evenly distributed.
Let it marinate for just 15 minutes. If you want a more intense marinade, it can be up to an hour.
STEP 2: The Breading
Prepare the TEMPURA
The tempura is mixed with orange juice and water, but we'll also add turmeric powder for a different flavor and a distinctive color. It should be a smooth mixture. SECRET
Tempura is common flour mixed with yeast, starch, and other ingredients. It is originally from Japan, but was introduced by the Portuguese in the 16th century.
STEP 3:
ORANGE SAUCE
The sauce is the flavor that the chicken will receive.
The special sauce has 7 ingredients:
¼ cup rice vinegar
2 garlic cloves
1 ginger clove
¼ cup brown sugar
1 cup orange juice
10 ml soy sauce
1 red jalapeño pepper
1 tablespoon cornstarch
2 tablespoons water

Mix all the ingredients without the cornstarch.
Cook for 5 minutes and add the cornstarch.
Finish cooking for 3 more minutes.
Set aside.
Preparation:
Put plenty of corn oil in a deep container and heat to 180 degrees Celsius.
Coat it with the tempura mixture.
