Feeling under the weather but still want to whip up something comforting? This Sambal Stingray is the ultimate spicy, sour, and refreshing meal that’s surprisingly easy to make—even when you’re not at 100%

Stingray is a perfect match for this recipe because its firm, meaty texture holds up well against the bold flavours of the sambal. Singapore has some amazing store-bought sambal, so you can skip the hassle of making it from scratch.
Traditionally, sambal stingray is grilled, but for this hack version, we're using the trusty air fryer. No mess, no stress, and done in just 20 minutes!
For an extra kick, top it off with some quick pickled onions. Just slice up some onions, squeeze calamansi over them, sprinkle a bit of salt, and you’re good to go.
