What better way to start the day than some delicious cocoa waffles with creamy orange curd. Dessert for breakfast anyone? The recipe cannot be easier.
Here is what you need:
For the waffles:
100g. flour
20g. cornflour
50g. sugar
20g. cocoa powder
1tsp. baking powder
30ml. vegetable oil
180ml. yogurt
1 small egg
1 egg white
For the orange curd:
50g. sugar
2 egg yolks
Juice of one orange
Little bit of butter
To make the waffle batter simply mix all dry ingredients in a bawl, then add the egg, the yogurt and the oil and mix until well incorporated. The batter will be thick, so fold in gently one beaten egg white to lighten it up. The egg white should be beaten until stiff picks are formed.
Once the batter is ready, bake it in your waffle machine for a minute or two, according to your waffle maker's instructions.
To make the orange curd, combine the yolks and the sugar in a saucepan over a low heat, and mix to combine. Add the orange juice and stir constantly with a wooden spoon, for about 8-10 minutes.
Remove from heat and add a little bit of butter in it. To get thicker consistency let the curd cool down, however in this recipe I never have the patience to wait:)
