Recipe:
*Ingredients:*
2 tablespoons olive oil
30g garlic, finely chopped
30g ginger, finely chopped
1 1/2 teaspoons garam masala
2 teaspoons or more curry powder
1 or 2 teaspoons turmeric powder
1 1/2 cups water (adjust as needed)
15g sea salt (or to taste)
1 cup coconut milk
2 teaspoons vegetable stock
Black pepper (to taste)
*Leftover Vegetables: (You can adjust to your leftover vegetables)*
2 large onions, diced
6 medium tomatoes, diced with seeds
1 green apple, sliced
2 stalks broccoli stems, sliced
1 sweet potato, cut
300g pumpkin, cut
2 zucchinis, cut
2 carrots, cut
4 celery stalks, cut
1 cup Shimeji mushrooms, cut off the bottom 1 cm
200g spinach stalks and leaves, cut
2 red bell peppers, cut
*Instructions:*
1. In a pot, heat the olive oil over medium heat. Add the finely chopped garlic and ginger, and sauté until fragrant.
2. Stir in the garam masala, turmeric, and curry powder, and cook for about a minute to toast the spices.
3. Add the diced onion and water (You can add curry powder if the color is not bright enough). Then add the tomato and green apple and cook until they are caramelized.
4. Add the hard vegetables and stir in the sea salt and vegetable stock.
5. Cover the pot with the baking paper and let it cook for approximately 10 minutes until the hard vegetables are just cooked.
6. Add the soft vegetables and simmer for an additional 5 minutes. Once the vegetables are slightly softer, reduce the heat and add the coconut milk. Stir to combine and simmer for an additional 5 minutes.
7. Taste and adjust the seasoning with more salt or black pepper if needed.
8. Serve hot with rice, bread, or your choice of side.
