Today we came across this lovely old lady who makes Berber pizza for a living. This stall is in old Kibili, a deserted Berber settlement that was once the last piece of civilisation before heading into the Sahara for the Berber people.
This is how Berber pizza is made, taking a simple bread recipe, adding a whole host of Tunisian spices and onions in a paste, covering this with a second flatbread and then cooking on an open fire for 3-4 minutes until toasted. This is then eaten hot from a paper wrapper as you walk on to your next destination.
The pizza costs 75p which is about 1 Euro and would make a good lunch meal.
