Pigs Trotter Bockwurst - Cooking with a Squirrel Cooker and open fire
I have just received this squirrel cooker made by Rhys Harris (http://www.rhysharris.co.uk/) and decided to treat myself to dinner out. The cooker is capable of many more applications than just a 'stuck' sausage and I will keep you updated as I use it more.
'Pigs Trotter' sausages are best made with bockwurst sausages, sliced two ways on both ends and shallow slices criss-crossed along the centre. Slow cooking over the fire will see the sausage cook all the way through whilst allowing the slices to open up into a 'pigs trotter'.
