Happy Easter 🐰 This year I'm celebrating with meatloaf made with all my favourite ingredients!🫶 See recipe below.
Meat:
2 lb extra lean ground beef
2 cups Parmigiano Reggiano, grated
3 slices white toast bread, crusts removed
1 cup whole milk
12 slices provolone cheese
2 mozzarella ball, sliced
12 slices prosciutto cotto
6 phyllo sheets
2 tbsp butter, melted
salt, QB
black pepper, QB
Rapini:
2 bunch rapini, ends trimmed
2 tbsp extra-virgin olive oil
1 garlic clove, sliced
1 tsp chilli flakes
salt, QB
In salted boiling water, add the rapini and cook for 1 minutes then remove from water. In a frying pan on high heat, add olive oil, garlic, chilli flakes, and the blanched rapini. Sauté for a few minutes.
In a mixing bowl, combine the ground beef, salt, pepper, and Parmigiano Reggiano. Soak bread in milk in a large bowl and squeeze out the excess milk in the bread. With your hands, shred the bread and add it into the mixture. Mix well to combine all the ingredients.
On a large parchment paper sheet, flatten out the beef mixture. Add prosciutto cotto, provolone, mozzarella, and the rapini. Using the parchment paper, roll the mixture to create a log/rectangular shape. Bake in the oven at 350 for 20 minutes. Once it's out of the oven, let it cool almost completely.
Remove the parchment paper and wrap the meat in phyllo sheets. Spread melted butter on the surface. Bake again at 350 for 10 minutes. Remove from the oven and let cool for 15 min and enjoy.
