Risotto is always best right after cooking. But what happens if you want to bring risotto to a friendsgiving potluck, or if you want to serve it for thanksgiving but don't want to slave away in the kitchen?
This delicious, saffron-perfumed risotto with sweet nuggets of butternut squash may be the answer.
Friendsgiving Risotto
2 cups Arborio rice
1 onion, diced
1 medium butternut squash, diced
1 cup dry white wine (like a Pinot Grigio)
1 cup grated Parmesan cheese
10-12 cups chicken broth
3 Tbsps. butter
Olive Oil
Pinch saffron
Salt and pepper to taste
Note: risotto takes about 15-22 minutes of cooking. This recipe breaks up this time over two days. You can always continue cooking the risotto on the same day until fully cooked.
