This is a classic recipe that has been passed down through generations, with roots dating back to the Roman and Arab eras in Spain. I'll also show you how to make them with or without filling so you can adapt them to your liking. They're so versatile that you can fill them with pastry cream, chocolate, or whipped cream!

*Ingredients:*
3 or 4 strips of lemon zest (without the white pith)
250 ml of water (1 cup)
50 g of unsalted butter (1/4 cup)
150 g of flour (1 1/5 cups)
4 eggs
1 packet of baking powder (10 g)
30 g of butter (2 tablespoons)
1 level teaspoon of salt
Powdered or granulated sugar
Plenty of oil for frying
Optional: chocolate cream, vanilla cream, or chantilly cream for the filling
*Preparation Steps:*
1. Mix the baking powder with the flour in a bowl and set aside.
2. Peel the strips of lemon zest.
3. In a large saucepan, heat the water along with the butter, salt, and lemon zest. Bring to a boil.
4. Reduce heat to low, add the flour, and mix until a thick batter forms.
5. Let it cool slightly and add the eggs one at a time, incorporating each egg well before adding the next.
6. Let the batter rest for a few minutes.
7. Heat the oil over medium heat in a deep frying pan.
8. Using two teaspoons, shape the fritters and fry them until golden brown.
9. Drain them on paper towels and roll them in sugar.
10. If you wish to fill them, make a small slit and add your favorite cream.
