My friend Brigitte Webster, professional food historian, challenged me to recreate a 15-16th C recipe she discovered for Banbury Cheese (now extinct food, if foods can be extinct). I accepted the challenge, and dove into the archives trying to discover all I could about the cheese. I'm not sure if I can recreate it, but I invite you to come along with me to see what I found out about this once world-famous food as well as the meaning behind the insult, "You Banbury cheese!" that shows up in Shakespeare's Merry Wives of Windsor.
