Ingredients:
Dried poppy seeds - 160 g
Sugar - 150 g
Water - 160 ml
Vanilla sugar - 1-2 tsp (to taste)
Butter - 30 g
Egg white - 1 egg

Filling yield: 450 g

Be sure to rinse the poppy seeds thoroughly before cooking. Pour water over it, stir, and let the poppy seeds settle to the bottom. If the poppy seeds are dirty, use a spoon to scrape off any debris from the surface.

2. Drain the poppy seeds through a fine-mesh sieve. If the poppy seeds are dirty, repeat this process again.

3. Place the saucepan with the poppy seeds on the stove, fill it with water (in a 1:1 ratio), bring to a boil, skim off any foam, cover with a lid, and reduce the heat to a simmer. Cook until all the liquid has evaporated and the poppy seeds are well steamed, about 20 minutes, stirring occasionally to prevent burning.

4. For an extra creamy flavor and a delicate texture, add butter to the poppy seeds and continue steaming until the bottom of the saucepan comes out dry, another 15 minutes.

5. The more liquid is absorbed, the thicker the poppy seed filling will be. 6. Remove the poppy seeds from the heat, add sugar and vanilla sugar, and stir. When you add sugar, the poppy seed filling will become runny; after it cools, it will be thick and viscous.
7. Grind the poppy seeds with an immersion blender; it's easier to do this in a tall measuring cup.

8. The mixture should be viscous. Let the filling cool completely. You can prepare the filling the day before and store it in the refrigerator, or put it in the freezer and remove it when you're ready to bake the buns. Before baking, add an egg white to the filling; it will help set the filling. Stir well (the yolk will be used in the dough or for brushing the buns before baking).
