In this video, Ben Luening uses the example of the Scottish whisky distillery Tomatin to explain how a Shell and Tube condenser works.
Tomatin has the longest fermentation time in the Scotch whisky industry: 168 hours of fermentation, which is equivalent to a whole week. The result is a very tropical fruity wash with flavors of bananas and overripe melons.
Tomatin has six still pairs, of which six wash stills and four spirit stills are still used today. The second distillation takes 12 hours, which is very slow in proportion and produces a soft spirit.
