STEP 1:
The Fish
First, we'll remove the dark parts of the fish to prevent the food from becoming bitter, as this area is where the blood flow was and has a flavor that doesn't add much to the soup, but rather subtracts from it.
We'll cut the fillet into evenly spaced pieces.
We'll place the fish in boiling water to "parboil" it, meaning it changes color but doesn't cook it.
We'll flake the fish with our hands and remove the bones.
We'll season with salt and pepper and set aside for a moment.
STEP 2:
The Vegetables
We'll add the three traditional vegetables found in Latin American cuisine.
Chili, tomato, and white onion, all sliced into evenly spaced squares.

STEP 3:
The Side Dishes
First, we have the all-purpose chicken broth. If you don't know how to make it, there's a video on the channel where I explain how to make it.
Now, this is my dad's secret: he added this broth to enhance the soup's flavor.
Peas aren't available fresh here in the region, so I buy them canned. This accompaniment adds texture to the palate when eating it.
Pickled chilies with vinegar: This accompanies the spicy flavor, but the vinegar also combines with the chicken broth, creating a sensation in different parts of the palate.
Oregano: An essential and secret condiment from my father. He used it without hesitation and with wonderful results; this soup goes very well.
Butter: That creamy flavor of the vegetables, we leave the comfort zone of vegetable oil.
Cilantro: It adds freshness to the dish and elegance when served.
Preparation:
In a saucepan, melt the butter.
Add the three vegetables to the saucepan with the butter and cook over medium-high heat until cooked through.
Add the hot chicken broth and wait one minute.
Add the fish meat and mix.
Immediately continue with the oregano, peas, chilies, and chili vinegar, and cook for 7 minutes.
Finally, add the cilantro and cook for two more minutes.
