Happy holidays to everyone with our Christmas Menu. Vegan and easy-to-prepare dishes. Surprising and delicious, they'll delight your family and friends.

APPETIZER: Baskets with Russian salad
Baskets:
160 g flour
40 g extra virgin olive oil
60 g water
Salt to taste

Russian salad:
140 g peas
100 g carrots
300 g potatoes
30 g pickled gherkins

Vegetarian mayonnaise:
80 g soy milk
130 g corn oil
20 g extra virgin olive oil
Salt to taste
1 tablespoon apple cider vinegar
1 teaspoon mustard
Turmeric to taste

FIRST COURSE: White lasagna with mushrooms, vegan speck, and peas
Mushroom sauce:
1/2 onion, finely chopped
500 g mushrooms, chopped
1 clove garlic
1/2 glass white wine
Extra virgin olive oil, salt Parsley to taste

Béchamel sauce:
1 liter unsweetened soy milk
60 g flour
70 g extra virgin olive oil
1 teaspoon grated nutmeg
Salt and pepper to taste

Lasagna:
Dried semolina lasagna sheets (no egg pasta)
90 g vegan speck
200 g vegan mozzarella (optional)
Grated vegan cheese to taste (alternatively, you can use nutritional yeast)
140 g cooked peas
Mushroom sauce (see above)
Béchamel sauce (see above)

MAIN COURSE: Roast seitan with potatoes
120 g gluten flour
1 tablespoon chickpea flour
125 ml water
1 generous tablespoon soy sauce
Spices:
2 teaspoons smoked paprika
1 teaspoon turmeric
1/2 teaspoon garlic powder
Pepper to taste

Chickpea omelette:
25 g chickpea flour
63 g water
Chives and salt to taste

Filling:
1 handful of boiled spinach
200 g vegan mozzarella
90 g vegan speck

Sauce to brush on before baking:
Soy sauce, smoked paprika, maple syrup, extra virgin olive oil

DESSERT: Vegan tiramisu
200 g Natural cashews
200 g unsweetened plain soy yogurt
90 g cane sugar (or white sugar)
80 g plant-based soy milk
20 g sunflower oil (optional)
Vanilla extract to taste
Turmeric powder to taste
2 or 3 cups of coffee
Vegan biscuits to taste (for two layers in the pan)
Cocoa powder
