Prickly pears, also known as tuna here in New Mexico are flourishing right now on the River Edge property!
We always admired the spiky, pink fruits so we decided to make a refreshing jugo fresco that can easily be turned into a fun, natural cocktail.
Follow these easy steps..
1) Find ripe prickly pears. You will know by the bright magenta color.
2) Pick the fruit from the root using tongs or thick gloves. Be careful, they’re called prickly pears for a reason!
3) Run water over to clean and shake in strainer to remove prickles.
4) Blend with equal parts water and a bit of honey.
5) Strain again to remove seeds from mixture. You can also use a cheesecloth which removes the pulp.
6) Pour and enjoy!
