Test Grip Comfort

You want to select a knife with a grip that feels comfortable in your hand. This will make it easier to cut with and also reduce the chance that you'll accidentally cut yourself with it. Try to visit stores that not only let you hold the knife but also have practice vegetables that you can test cut. Consider Blade Length

Chef's knives come in various lengths, but an 8-inch blade is most common. Also consider blade height. French-style blades are shorter, while Japanese blades tend to be taller. All blades should be curved toward the end so that it will rock back and forth when you chop with it.
