Summer months can be quite difficult, especially when it becomes very hot. At those times, it’s important to keep yourself hydrated and cool. There are lots of ways to achieve that and one of my favourite is a virgin mojito. A mojito is a cocktail recipe that has flavours of lime and mint mixed with rum. For our Virgin Mojito recipe, we’re not using any alcohol so it can be enjoyed by anyone at anytime during the day or night. It’s even perfect for kids!
The secret to my perfectly balance Virgin Mojito recipe is the use of simple syrup. In cocktails, a simple syrup is always used instead of directly using sugar since sugar will not dissolve easily in cold water. Simple syrup is already dissolved so it is perfect to use in any cold drinks, especially cocktails and mocktails. Unlike simple syrups that you might have made for sweet desserts like Gulab Jamun, my recipe only take a few quick minutes. It doesn’t need to be the thick consistency that you use in desserts since we just need the sugar to be dissolved. As a result, my version is super quick. It can also be stored in the fridge for up to 4 weeks!

Virgin Mojito Ingredients:
Sugar Syrup - 2 tsp or as per desired sweetness
Mint Leaves (Pudding) - 10-12 leaves
Juice of 1 lime
Few lines of lime
6-10 Ice Cubes
Soda Water - to top off
Simple Syrup Ingredients:
Sugar - 1 cup
Water - 1 cup
