How I make my gluten free beer with sorghum syrup.
Ingredients:
4.4lbs Sorghum Syrup
2.2lbs Honey
7 Chopped Limes
2.5tsp Yeast Nutrient
2.0oz Hops
1 Whirfloc (can substitute with bentonite)
2.5tsp Yeast Energizer
1pkg Yeast
Honey sourced from Ohana Honey Farm here in Manitoba:

Spoiler: This did not naturally carbonate as well as it should have, possibly from the honey (the honey is newer in my recipe). My last batch (just bottled it) was nearing the end of the fermentation when I bottled it. I am hoping since the yeast was still active that it will make a difference in the carbonation process. I will update this in 4 weeks.
14 May '22: I tried both beers and the second batch carbonated far better than the first. So when using honey I recommend bottling once the fermentation has slowed, but not stopped. The second batch was bottled with 1. 25 cups dextrose.
