Valentine's Day Red Velvet Cake Pops.

Ingredients.
8 Tablespoons of butter, room temperature.
1 1/3 Cups sugar
2 Large eggs, room temperature
2 Tablespoons red food color
3 Tablespoons cocoa
1 Teaspoon salt
1 Teaspoon baking soda
1 Teaspoon vinegar
2 1/4 Cups AP Flour
1 Cup buttermilk

Cream Cheese Icing.

1 Package of cream cheese.
1 Cup of icing sugar.
1 Teaspoon of vanilla extract.

Coating.

1 Cup of Red Chocolate for coating, melted in the microwave oven for about 1 minute.
Assorted sprinkles.

Instructions.

1. To make the cake: Preheat the oven to 350°F. Lightly grease a 10" pan, then line the bottom with parchment rounds, and lightly grease the parchment, too.
2. Beat the butter and sugar until well combined. Add the eggs one at a time, beating after each addition.
3. Stir in the food color, cocoa, salt, baking soda, and vinegar.
4. Beat in the flour alternately with the buttermilk, beginning and ending with the flour. The point is to keep the mixture smooth, which is more easily accomplished if you add the flour and buttermilk in portions.
5. Scoop the stiff batter into the pans; wet your fingers or a rubber spatula, and spread it to cover the bottom of the pan, smoothing the top a bit in the process.
6. Bake the cakes for 35 to 40 minutes, until the tops feel set and a cake tester inserted into the center comes out clean.
7. Remove the cake from the oven, and allow to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.
8. Make crumbles with the cold cake.
9. Mix all ingredients for the Icing in a mixer.
10. Mix the Icing with the cake crumbles to make a kind of dough, make balls with your hands.
11. With a stick, grab every cake ball and cover with the red chocolate coating already melted, add some sprinkles and let them cool.
