Internet-famous Cucumber Salad
This recipe is a delicious and refreshing take on the popular TikTok cucumber salad recipe.
The combination of tangy rice vinegar, salty soy sauce, and sweet honey creates a perfectly balanced dressing that complements the cool, crisp cucumbers beautifully.
The addition of grated ginger and minced garlic adds a hint of spice and depth of flavor, while the chopped cilantro brings a fresh, herbaceous note to the dish.

Ingredients:
2 cucumbers
1 tsp salt
2 tbsp rice vinegar
1 Tbsp low-sodium soy sauce
1 tsp sesame oil
1 tsp maple syrup (or honey)
½ tsp grated ginger
½ tsp minced garlic
¼ tsp red pepper flakes
4 Tbsp chopped roasted cashews
Instructions:
Begin by washing the cucumbers and slicing them thinly, either using a mandoline or a sharp knife.
Place the sliced cucumbers in a colander and sprinkle with 1 tsp of salt. -- Toss the cucumbers to distribute the salt and let them sit for about 10 minutes to draw out excess moisture.
While the cucumbers are sitting, prepare the dressing. In a separate small mixing bowl, whisk together the rice vinegar, soy sauce, sesame oil, maple syrup, grated ginger, minced garlic, and red pepper flakes until well combined.
Rinse the salted cucumbers under cold water and pat them dry with a clean kitchen towel or paper towels.
Place the cucumbers in a large mixing bowl, pour the dressing over them, and toss to coat the cucumbers thoroughly with the dressing.
Add the chopped roasted peanuts to the mixing bowl, and toss once again to distribute the peanuts evenly throughout the salad.
