Ingredients Preparation
Gather honey, bread flour, dried blueberries, salt, warm water, and your active sourdough starter.
You will also need a bowl, a kitchen scale, and a whisk.
Mixing the Dough
Start with 100 grams of your active sourdough starter.
Add 255 grams of warm water (approximately 100 degrees). Whisk together.
Add 40 grams of honey and mix until dissolved.
Add 500 grams of unbleached bread flour and 10 grams of fine salt. Mix together.
The dough will be very thick. Use your hands or a stand mixer to knead for 10 minutes.
Adding Blueberries
Halfway through kneading, add two-thirds of a cup of dried blueberries.
Continue kneading to evenly distribute the blueberries.
Resting the Dough
Cover the bowl and let the dough rest for 8 hours.
Shaping the Bagels
After 8 hours, weigh the dough (990 grams) and divide it into 8 equal parts (123.75 grams each).
Roll each portion into a ball.
Shape the dough into bagels by folding in the edges, flipping over, and pinching closed.
Preparing for Baking
Place the shaped bagels on a floured surface. Ensure they are not touching but have room to rise.
Let the bagels rest until they rise and the dough becomes easier to handle.
Final Steps
Preheat your oven and prepare a pot of boiling water.
Boil each bagel for 1-2 minutes on each side.
Place the boiled bagels on a baking sheet and bake until golden brown.
