I will never fully understand why God did this, but I'm starting to think I might have an inkling. I'm trying to live a more healthy lifestyle, so come make bread and cashew milk with me as we have a hard but good conversation.
I made two loafs, but the recipe will be for one! 🌺
Spelt bread recipe ingredients :
1 cup walnuts
4 cups whole spelt flour
1 1/2 teaspoons salt
1 1/4 teaspoons baking soda
2 1/2 spoons honey or molasses (use apple sauce as a supplement)
1 1/2 spoons nut mix (sunflower, pumpkin, sesame and chia)
1 1/2 cups water
Instructions:
1. Set oven to 190 °C (375 °F) - do not set on turbo.
Grease an English cake tin about 23x13 or 11x29 centimeters.
2. Roast walnuts from 8-10 mins till fragrant, cool down and chop.
3. In a big bowl, mix all ingredients EXCEPT the nut mix till combined.
4. Add mixture to a greased tin, level the dough, and then combine the nut mix with olive oil and press it into the dough.
5. Bake for 50-60 mins until the top is brown.
6. Remove from the oven, wait 5 mins to remove the bread, and lay it on a cooling rack.
Cashew milk ingredients (serves 2 cups):
1. 1/2 cup cashews (soaked over night or not)
2. 2 pitted medjoul dates or 6 halawai dates
3. 1/4 or 1/2 tea spoon cinnamon (to tast)
4. 1/5 Vanilla extract or powder
5. 2 cups cold water
5. A pinch of salt
Instructions:
1. In a blender, combine all ingredients and blend until thoroughly blended
2. Serve cold or over ice.
3. Adjust ingredients to taste.
Note: Store in the refrigerator; cashew milk is good for up to a few days, so notice if the smell or taste goes bad.
