How to Make a Big Breakfast for 8-10 People. Follow these three easy steps below to help you avoid costly mistakes that will cause you to Crash and Burn lol...
1. Plan how much food based on how many people. Pick Ingredients that take less prep, try to go fresh when possible.
13-16 thick slices Bacon (1 lb) (No prep)
16 Sausage patties (fresh) (No prep)
1 bag refrigerated Hash Browns (No prep)
12 Pancakes (Mix right before starting the griddle)
9 pieces of Toast (No prep)
18 Eggs (Scrambled is easiest and everyone likes scrambled. Whisk eggs right before starting the griddle or anytime before. Keep refrigerated if prepping in advance.
2. Plan your cook
Will all your food fit on the griddle or do you need a place to store the cooked items to make more room for other items while cooking? Warming rack
Set up your cooking area; folding table/cooking utensils/paper towels/seasonings/trays/garbage can
Use a tray with sides/handles to carry everything to/from the griddle
Start with the items that take the longest time to cook and progressively add items until all is cooked (do the math). Below is a cheat sheet for medium heat (350F-375F):
Bacon 10-15 minutes
Sausage patties 10-15 minutes
Hash Browns (refrigerated) 10-15 minutes
Pancakes 2-4 minutes
Toast 2-4 minutes
Eggs 2-4 minutes
3. Plan how you are going to store/serve your breakfast
As a general rule it is easiest to serve everything on a large platter/tray or two and loosely cover to keep warm. Tin pans and foil work great.
Have plates/utensils/napkins set up ahead of time so guests aren't sitting there with a bunch of delicious food that they cannot eat and is getting cold while you scramble (no pun intended)
Same thing with drinks. Keep it simple but plan ahead. A gallon of orange juice and a sleeve of cups works great. Also, the obvious, make coffee before breakfast is served.
