Semitas Chorreadas, my most delicious recipe and a true tradition in Nuevo León, enjoy them with your family!
🩷👩🍳 Lissy's key tip for the recipe:
👩🍳 Bring the mixture of evaporated milk and water with the cinnamon sticks and anise ground in a molcajete (mortar and pestle) to a gentle boil overnight. Cover and refrigerate. When you're ready to bake the semita, add a little more water and heat it again. This will give the semita an exceptional cinnamon and anise flavor. (Use it warm to finish kneading the dough.)
👩🍳 Bake the semita in an electric oven.
Ingredients:
1 kg Flour
1/2 kg Vegetable Shortening
3 tbsp Baking Powder
1 tbsp Ground Cinnamon
1 tsp Salt 1 tsp Ground Anise
1 cup Sugar
1 Grated Piloncillo (Mexican brown sugar cone)
1/2 cup Evaporated Milk
1/2 cup Water
2 Cinnamon Sticks
1 cup Chopped Walnuts
1 cup Raisins
For decorating semitas:
1 Grated Piloncillo
Mix of Sugar and Ground Cinnamon
Pink Glaze (Fashionable Version)
Sifted Powdered Sugar
Evaporated Milk (as needed)
Pink Pearls and Pink Toppings
Instructions:
1. Preheat oven to 180°C (350°F)
2. Prepare two baking sheets and a silicone mat
3. Boil evaporated milk, water, cinnamon sticks, and ground anise
4. Grate one piloncillo for the semita dough and another for decorating before baking
5. Sift together flour, baking powder, ground cinnamon, salt, sugar, grated piloncillo, and shortening (cooked to consistency) If the mixture is sandy, add walnuts and raisins and mix. Incorporate the warm milk, flavored with cinnamon sticks and anise, and knead to form a dough.
6. Shape the semitas to the desired size, place them on a baking sheet, brush with evaporated milk, sprinkle with grated piloncillo to taste, a mix of sugar and cinnamon, and bake at 180°C (350°F) for 35 to 40 minutes, depending on the desired golden brown color and size of the semita.
7. For the Super Fashion Pink Semita, make a thick glaze with sifted powdered sugar, enough evaporated milk, and pink food coloring. Place in a piping bag fitted with a fine tip and pipe the glaze onto the semita. Decorate with edible pink pearls and sprinkles.
