With late stage capitalism upon us, we should probably do a better job of reusing what we got. I've been enjoying the past few months of rides on this 1990 Trek 7000. Since it's been about 100 miles (70+ off road), I figured I'd offer a review. Here's a rundown of what I added to the bike to make it more modern and trail-friendly:
new Dimension stem - shorter and more upright
wider bars
bolt-on Pilgrips
Charge Spoon saddle
Origin8 threadless stem adapter which allows a much wider selection of stems and handlebars
I cleaned and rebuilt the bottom bracket, cleaned up the frame and original wheels. Experimented with different tires. For full video on the rebuild/resto-mod, click here:

And here's my overall thoughts after 100 miles:
Super fun! I would not have ventured into off-road riding without this bike. I wasn't going to spend $500 or more to try out mountain biking. Therefore, even though I've probably put $200 into this build, to me it was totally worth it.
Great learning process! I knew a bit about fixing up bikes before, but this gave me more time working on mountain bikes rather than old road bikes.
Many people overbike! Something like this can easily handle dirt, gravel, and even some single track trails. See my other videos if you're curious about how I do as a noob mountain biker.
Getting to know my local bike co-op! If you're lucky enough to have a bike co-op in your area, support them and they'll support you. Here's a link to my local co-op, BiciCo: https://bicico.org/
What's next? I got some WTB Trail Boss tires, 26" x 2.25." Let's see whether they enhance performance of the bike.
