Pie "a la Caprese"

Puff pastry - 500g
Tomato - 2-3 pcs
Mozzarella cheese - 250g
Olive oil - 5ml
Pine nuts - 1 tsp
Dried basil - 1 tsp

Pesto sauce:
green basil (leaves without stems) - 30g
Parmesan - 50g
pine nuts - 40g
garlic - 2 cloves
salt - 2/3 tsp
olive oil ex.vir. - 100 ml

For pesto sauce, crush garlic with salt in a mortar, add fried pine nuts, basil leaves, olive oil and parmesan cheese.

I roll out the puff pastry, fold the edges and evenly distribute the pesto sauce. I put tomatoes and mozzarella on top as in the video, drizzle with olive oil, sprinkle with nuts, basil, grease the edges with egg and put in the oven preheated to 175 degrees for 30 minutes (it may take a little more time if the tomatoes give off a lot of water).

When serving, decorate with basil and get the most delicious pie.
