LEMON CURD for CAKES and PASTRIES / Basic Lessons / Slavic Secrets
Lemon curd is a custard made with fruit juice. This cream is actually a classic. It is popular with toast, cakes, and pastries. Its consistency is creamy and resembles pudding. Curd is made from different fruits, but I offer you lemon curd. It can be served for breakfast with freshly baked pancakes or crepes, or used to fill muffins or cupcakes. Curd is also great for vanilla cake, and puff pastries with it are simply magnificent!
You will need (for 400 g of cream):
3 lemons;
3 eggs;
100 g of butter;
250 g of sugar.
