Santol or Cotton fruit in English is a tropical native fruit in Southeast Asia. It comes with a sour outer layer and a subtle sweet seeds covered with white flesh that is similar to a cotton hence the name cotton fruit. It is usually eaten as it is but in this recipe, i'll be using it as a souring agent to my sinigang, a popular sour soup here in the Philippines! Ingredients are:
2 salmon heads
Salt
2 lemons
2 liters water
3/4 kl santol (cotton fruit)
3 pcs. Medium size tomatoes
1 red onion
2 size of a thumb ginger
A bunch of sitaw) (long beans)
1 pc. of labanos (radish)
Around 6 to 8 pcs. Okra
A bunch of kangkong
3 tbsp fiah sauce
1 tsp crushed peppercorns
