Santol or Cotton fruit in English is a tropical native fruit in Southeast Asia. It comes with a sour outer layer and a subtle sweet seeds covered with white flesh that is similar to a cotton hence the name cotton fruit. It is usually eaten as it is but in this recipe, i'll be using it as a souring agent to my sinigang, a popular sour soup here in the Philippines!
