Spicy Gingerbread Christmas Cake | Recipe for ginger cake

Ingredients:
1 cup peeled, thinly sliced fresh ginger
1 cup sugar
1 cup neutral tasting oil
1 cup Brown Sugar
2 1/3 cups flour
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
2 tsp baking soda
1 cup boiling water
2 large eggs
Meringue Frosting:
4 Egg whites
1 Cup Sugar
1 Pinch of cream of tartar
