Recipe for: Tomato Sauce in Jars. Suitable for Pizza and Pasta. Winter!

Required products:

3 kg. tomatoes, washed, cleaned and roughly chopped
4 onions, coarsely chopped
5-6 carrots, coarsely chopped
Half a head of celery, roughly chopped
10 cloves of garlic
1 bunch basil, finely chopped
3 tablespoons of salt
3 tablespoons of sugar
100 ml. oil

Method of preparation:

Pour the oil into a preheated saucepan.
Add the onion, carrots, celery and garlic cloves. Fry for 7-8 minutes until the vegetables begin to caramelize.
Add the tomatoes and stir.
Put the lid on the pot, reduce the heat to medium and let the tomatoes simmer for about 30 minutes.
After 30 minutes, add the salt, sugar and chopped basil. Stir.
Put the lid on the pot and continue to cook for another 30 minutes.
Turn off the heat and puree until you get a smooth tomato sauce.
Pour the sauce into pre-sterilized jars, filling to the brim.
Close the jars tightly with the lids.
Arrange the jars in pots with a towel placed on the bottom. Fill the pots with water up to 1 inch above the lids.
Put the pots on the stove, wait for it to boil, cook for 20 minutes and turn off.
Remove the jars from the pots and turn them upside down. Allow them to cool, then store them in a dark, cool place for the winter.
