Osaka Street Food & Understanding Dashi
On a recent trip to Japan, I met up with former Chicago Mayor (and current U.S. Ambassador to Japan) Rahm Emanuel, to talk about Osaka, since Chicago and Osaka are celebrating 50 years as Sister Cities. I also followed a Chicago chef there, and learned more about some of the city's beloved culinary creations, as well as the building block to all Japanese cuisine: dashi.
