Beef Stuffed Eggplant Rolls
Delicious beef stuffed eggplant rolls served with rice, a homemade garlic yoghurt sauce and parleys. They are easy to make and I absolutely love this dish.

2-3 eggplants
Oil
Salt

500 g minced beef
1 onion
2 tsp of cumin
1 tsp of coriander
1½ tsp of salt
pepper
Yoghurt sauce:
300 ml greek yoghurt
1-2 cloves of garlic
Salt
Water
1 tbsp of tomato puree
½ broth cubes
Water
Rice
Parsley
