PITFALLS, watch out for the following:
1) Do not let the ribs dry out during the smoke period, keep the top moist using the apple juice.
2) Do not push the fail wrap against the top of the ribs. The foil packet must be air tight, but do not smash the foil into the top of the ribs. Pressing the foil against the top of the ribs will dry them out.
3) To much smoke time after removing the ribs from the foil. This is especially true if no bbq sauce is used. The ribs can dry out very easily during this last step. Only cook long enough to dry them after steaming, not over dry them before eating.
