Kunafa Recipe
Who doesn’t love Kunafa? The richness of cheese and the delicious but crunchy layers and the flavourful rose syrup…..mmm..
To be honest, there is no right or wrong filling for Kunafa. you can add any cheese-cream filling you like. Personally , my favourite filling is mozzarella cheese for it gooey, melty, stretchy texture
Here’s a traditional recipe of Kunafa with Ricotta cheese without oven.
Ingredients
Kunafa Dough
1 cup Butter
Ricotta cheese
For the syrup
2 cup sugar
1 cup water
1 tbsp fresh lime juice
1/2 cinnamon stick (optional)
3 cardamom pods, smashed open (optional)
To Garnish
1 cup Pistachios
Method
Cut the Kunafa dough into small pieces, at least an inch length.
Add melted butter/ghee, I used ghee here
Mix well, make sure each strand of the dough is well coated.
Take a pan and spread half of the kunafa dough evenly filling a circle
Spread the cheese evenly using a spoon
Spread other half of the dough on top, make sure you cover all the area.
Switch on the stove and keep the flame in medium - low
Cook the kunafa until the bottom turns golden colour.
flip the sides and cook the same way.
Garnish it with pistachios
For the syrup
In a saucepan, boil sugar and water together
Try not to mix it unless the sugar is not dissolving. Mixing prevents the crystallisation of sugar
when it starts to boil, turn the flame to low and add cardamom pods, cinnamon stick, fresh lime juice and rose water
Switch off the flame and pour it on top of the Kunafa when serving
