Where did our carnitas come from? It's undoubtedly on the outskirts of Zona Rosa (a red-light district that combines Kabukicho and Ni-Chome in Japan). It's a roadside restaurant just past a major subway station. I wanted to try it in Japan, so I created this place. You're probably used to the combination of fatty parts, right? It's pork skin. And then there's the sour tomatillo. If you want it spicy, try some pickled habanero peppers. Suck it in like a kiss. Because tacos are love.
