When I think of suadero, I always picture an evening scene in Ciudad de Mexico.
Taco makers busily preparing their tacos. Their hard work fills the stomachs of the hardworking people of Ciudad de Mexico.
I wanted to eat that in Japan. I wondered if there was a taquero (taco maker) out there who could do it.
But as far as I knew, no one was making those roadside tacos. If no one else was going to do it, I would.
And so my "suadero" began. I would be happy if I could share the feelings and background story behind it with everyone, as well as the yearning I feel every day. Because tacos are love.
