The tacos we at Tres Hermanos serve to people in Japan are tacos from the capital, Ciudad de Mexico.
They're not tacos that have been imported via the United States, nor are they tacos from other regions.
These are the tacos from that city that have been loved in Ciudad de Mexico.
Without changing that, and by using ingredients sourced from Mexico,
we've been exploring how we can become a taco shop that lives alongside Mexico, giving back to Mexico without compromising its customs.
These tacos are the result of our search for ways to do so.
That's why we don't try other types of tacos that don't fit our customs.
And what I want to convey in this video is that when people in Japan get to know the culture of Ciudad de Mexico and how tacos fit into Mexican life,
I think it would be wonderful if we could create a world where people can think about and experience Mexico in the same way we do.
One of these is actively importing local products rather than consuming them locally in Japan, lowering the barriers to doing so, and encouraging people to enjoy the original flavor of imported ingredients and gain appreciation. It also involves communicating their appeal to fellow industry members.
Just as Italians have come to define Italy, starting with spaghetti and now including olive oil, canned tomatoes, cheese, and prosciutto, I hope that Mexico, too, will learn about its roots and move forward on its own path of evolution, without leaving Mexico behind.
While paying respect to the fundamental philosophies that have enabled Japan to achieve its unique evolution, such as learning from the past and creating something new, and the concept of "shu-ha-ri," I ask that you all deeply understand the intention behind our "step forward." Because tacos are love.
