The economy, am I right? 😆 But for real, giving a more inexpensive meat the short rib treatment is a great way save a few bucks. 💴 If going for a Chuck roast DO NOT get the English Cut which is much leaner and will result in a tougher product. You want the fat in a traditional Chuck Roast so it can render and braise to create a fork tender short rib dupe.
