Ingredients:
Ginger
Garlic
Green onions
Raw lobster - Flour
Corn starch
Oil for frying
Oyster sauce - Fish sauce
Rice wine
Sesame oil
Sugar
Cracked black pepper
Instructions:
1. Slice ginger to your desired texture. I sliced it a cm thick.
2. Smash & chop a handful of garlic to your desired texture. I finely chopped it.
3. Chop scallions to your desired texture. I chopped it an inch in length.
4. Cut raw lobster into pieces. Start by separating the tail from its head then remove the claws from its head. It’ll make it easier to cut into smaller pieces. Put roe it in a separate bowl & try not to break the roe!
5. Lightly coat the lobster with 2 Tbsp of flour & 2 Tbsp of corn starch.
6. Mix the flour & corn starch into the raw lobster pieces.
7. Fry the lobster pieces for approx 3-5 minutes (depending on size). Don’t forget to fry the roe as well!
8. Remove fried lobster pieces & set aside.
9. In a small bowl, mix 1.5 Tbsp of cornstarch with 2 Tbsp water & set aside.
10. Turn stove onto high heat & add 1/3 cup of frying oil to a large wok/pan.
11. Add chopped garlic
12. Add sliced ginger
13. Mix it around.
14. Lower stove to medium heat.
15. Add 5 Tbsp of oyster sauce.
16. Add 2 Tbsp of fish sauce.
17. Add 4 Tbsp of rice wine.
18. Add 1 Tbsp of sesame oil.
19. Add 3 Tbsp of sugar.
20. Add 2 Tbsp of cracked black pepper.
21. Add corn starch mix.
22. Mix it all up. Sauce should thicken up.
23. Add in cooked lobster & mix the lobster around until lobster is evenly coated with the sauce.
24. Adjust according to taste.
25. Garnish with green onions. Give it a nice stir & enjoy!
