It's apple season here in New York!
Apples are a beautiful accompaniment for pork. In today's video, I'm making Stuffed Pork Loin. My stuffing has apples and cornbread to give it subtle sweetness, plus savory notes from onion, celery, and herbs. A bit of citrus rounds out the flavors and ties it all together.
My basic recipe for the stuffing is laid out below, but this is really just a guide for you. Play with it, add your favorite flavors and make it your own.
As for the technique of roll-cutting the pork loin, it's something you have to watch rather than read about, so please refer to the video. And don't be scared...you can do it!!!
Apple-Cornbread Stuffing
1/2 stick of butter
1 large apple, peeled, cored and chopped
1 cup chopped red onion
1 celery stalks, chopped
1 tsp ground rosemary
1 tsp ground thyme
1 tsp ground sage
1 1/2 cups chicken broth
1 handful of chopped parsley
1 lemon
Prepared cornbread.

In a large skillet, over medium heat, melt the butter. When it begins to foam, add the apple, onion and celery. *See NOTE for optional additions to stuffing.
Cook and stir until tender, about 5-7 minutes.
Season with herbs.
Add enough chicken broth to cover mixture and bring to a boil.
Add parsley and zest from the lemon.
Remove from heat.
Add enough cornbread to absorb most of the moisture to create a "mushy" stuffing.
Add the juice from 1/2 the lemon.
Taste and adjust to your liking.
Roll-cut a 2 1/2 lb pork loin (again, please refer to the video)
Liberally season with salt and pepper.
Spread stuffing on the pork, leaving a 1" margin on all sides.
Roll the pork loin. Don't worry if some stuffing comes out.
Tie securely with butcher's twine.
Wrap in plastic wrap and refrigerate for at least an hour.
Preheat oven to 350℉
Lightly coat the pork with olive oil and season with more salt and pepper.
Roast on a rack (seam-side down) for about an hour until the internal temperature reaches 135℉
Rest for 15 minutes before slicing.
*NOTE: Adding cranberries and/or nuts is also a delightful addition to the stuffing.
