Grilling chicken can be tricky. Sometimes it's overdone on the outside and underdone on the inside. In this video, I'll show you how to get it just right. This is The MOST Delicious BBQ Chicken EVER!
Ingredients:
1 whole chicken, cut into 8 pieces
1 qt buttermilk
2 TBSP poultry seasoning (if salt-free, add 1 TBSP course salt)
BBQ sauce. Here's my recipe: • Sweet & Spicy Barbecue Sauce
Method:
Whisk poultry seasoning (and salt, if using) into the buttermilk.
Place chicken pieces in a resealable bag.
Pour in buttermilk mixture.
Set in the refrigerator for at least 1 hour or overnight.
Remove chicken from refrigerator and allow to come to room temperature.
Set grill on HIGH (instructions for using charcoal follow below)
Pat the chicken dry and discard the buttermilk.
Place the chicken skin-side up on the periphery of the grill.
Reduce the heat to LOW.
Close the lid and grill for 15 minutes.
Turn the chicken and grill for 15 minutes more.
Brush with BBQ sauce and turn. Grill for 5-10 minutes.
Brush with more sauce and turn again. Grill for 5-10 minutes.
Once the internal temperature reaches 165℉, the chicken is done.
*For Charcoal Grills
When the coals become red-hot, gather them to the center of the grill. Place the chicken on the periphery of the rack and follow directions as stated above. The name of the game is to never have the chicken directly over the coals.
