Overall, I'm not super happy with the end result, and the main reason being that the main thing I wanted to achieve (complex 3D camera movement in After Effects) turned out to be much much harder.
Creating an environment from images works well for simple camera movements, however there's an unfortunate tendency in AE for each image to react differently to the camera, meaning some react more and some react less, which leads to a lot of wonky and off-putting movement of the environment.
The 2nd takeaway was that an overly busy environment becomes very distracting and pulls focus off the main action that's taking place, so the majority of times, you want something that's simple yet functional for action oriented sequences.
On the plus side, I learned a lot more about creating a "skybox" in AE and even figured out how to make one using video files which is great for certain environmental effects. I also learned how to get the voice box reacting to a sound clip, allowing for accurate mouth movement for voices.
