Sogee, a chef with over 40 years of experience and a background in traditional Chinese cooking, started his own restaurant, Chicken House, in Sheung Wan seven years ago. He and his son, Terrance, have always worked closely together, adhering to the principle of "doing one thing well, not just doing one thing," making their restaurant a popular spot in the area. Recently, he opened a branch, HKS, on the same street, continuing to use his signature nourishing Hakka yellow wine chicken soup to cook Shanghai noodles, paired with Japanese Senmi-Tori chicken. The new branch features popular premium home-style dishes as noodle dishes, offering affordable options like braised crab meat noodles in crab broth and Wagyu beef cheek stewed in beef bone broth for around 80-90 HKD.
Father and son used to frequently disagree. When the son was younger, he would often take shortcuts to save time and effort, skipping steps. The father, however, was meticulous and demanding. For example, after steaming chicken, the father would wrap it in cling film to lock in the juices and prevent evaporation; even wiping the countertop required disinfection with alcohol, ensuring the edges and crevices were spotless. Every time things clash, they take a break to cool off, then immediately make up, never holding grudges.
The son always remembers his father's example; now, running two shops, the father and son divide the work, working together to ensure every dish is perfect for their customers.
