Medium Demolisher with Gun turrets
I had very little hope that this would even work, but to my surprise the extra firepower killed the demolisher quicker and distracted it from exploding me with lava.
I used a simple blueprint of a 4 gun turret pattern with ammo assigned to the middle one. Then added a solar panel to power the inserters so it would share the ammo with the other 3
