Ingredients:
2 (15 oz.) cans of Chickpeas, undrained
Zest of one Lemon (about 1 tbsp.) (optional)
1/4 cup Fresh Lemon Juice (about 1 lemon)
1/4 cup Tahini
1/4 cup Olive Oil
1 teaspoon Salt
4–6 tablespoons Water, as needed
Instructions:
Prepare Chickpeas:
Rinse and drain the chickpeas from the cans. If you have extra time, you can remove the skins from the chickpeas for an even smoother hummus.
Blend Ingredients:
In a food processor, combine the undrained chickpeas, lemon zest (if using), fresh lemon juice, tahini, olive oil, and salt.
Blend Until Smooth:
Process the mixture until it forms a smooth and creamy consistency. You may need to scrape down the sides of the food processor and blend again to ensure everything is well incorporated.
Adjust Consistency:
If the hummus is too thick, add water, one tablespoon at a time, and blend until you achieve your desired consistency. Continue adding water until it reaches the desired creaminess.
Taste and Adjust Seasoning:
Taste the hummus and adjust the salt or lemon juice according to your preference. You can also add more tahini for a stronger sesame flavor.
Serve:
Transfer the lemon tahini hummus to a serving bowl. If desired, drizzle a bit of olive oil on top and garnish with additional lemon zest.
Enjoy:
Serve the hummus with pita bread, fresh vegetables, or as a spread. Refrigerate any leftovers in an airtight container.
This Lemon Tahini Hummus is a delightful and refreshing dip, perfect for snacks or as an appetizer. Enjoy!
