This WATERMELON MOCHI feels like slime but tastes delicious!
✨Recipe:
1 ½ cup Glutinous Rice Flour
⅓ cup Granulated Sugar
⅓ cup Corn Starch
1 ½ cup Watermelon Juice, Strained
1 ½ tbsp Vegetable Oil
Directions:
1. Blend watermelon flesh in a blender until smooth, then strain through a fine mesh sieve to remove any pulp.
2. In a bowl, mix together the glutinous rice flour, sugar, and cornstarch.
3. Add the watermelon juice and vegetable oil, and whisk until smooth.
4. Heat a saucepan over medium heat and add the mochi mixture, stirring consistently for 5-8 minutes, or until the mochi mixture thickens and changes into a dark pink translucent color (the mixture should be very sticky).
5. Line a 5 inch x 5 inch square mold (or any similar sized rectangular container) with parchment paper and pour in the warm mochi mixture, then press it down with a spatula to flatten it.
6. Place the mochi in the fridge to cool for 1-2 hours, or until slightly firmed up.
7. Remove the mochi from the refrigerated mold and place it on a surface dusted with corn starch.
8. Dust the mochi with more cornstarch, then using an oiled knife, cut into 1 inch x 1 inch squares.
9. Separate and dust all sides of the mochi with cornstarch, serve and enjoy! 😊
