Easy Blueberry Bars
CRUST AND TOPPING
1 1/2 cups all-purpose flour
1/2 cup sugar
pinch of salt
3/4 cup cold butter, cut into cubes
FILLING
2 eggs
1 cup sugar
1/3 cup all-purpose flour
1/2 cup sour cream
pinch of salt
3 cups fresh blueberries
Preheat oven to 350°.
Spray a 9 x 13 glass baking dish with non- stick spray and set aside.
Add flour, sugar, salt, and the cubed butter to a mixing bowl and beat until combined and crumbly. Do not over mix. This should be crumbly. (You may also cut in the butter with a pastry cutter or your fingers.)
Remove one cup of the crumb mixture and set aside.
Take the remaining mixture and firmly press into the baking dish, covering the bottom of the dish. Bake 10 to 12 minutes or until just firm to the touch but with no brown on the sides.
While the crust is baking, add sugar, sour cream, flour, salt, and eggs to a bowl and stir together.
Gently fold in the blueberries.
When the crest is ready, remove from the oven and add the filling. Gently spoon this over the crust. Sprinkle the filling with the remaining crumbly mixture that you had set aside earlier. Bake 50 - 60 minutes or until the top is lightly browned.
Cool 10 minutes before slicing.
