Homemade traditional Christmas Cake recipe - full of dried fruits and festive flavours!

This easy Christmas Cake recipe is the perfect recipe for Christmas Cake, and it will get you feeling very festive within moments!
Ingredients:
225g raisins
225g currants
225g sultanas
112g mixed peel, chopped
225g plain flour
1 level tsp mixed spice
225g unsalted butter
170g light soft brown sugar
4 large eggs, beaten
112g glacé cherries, quartered
112g ground almonds
1½ tsp brandy
Almond Paste (xxx)

Method:
1. Mix the raisins, currants, sultanas and mixed peel together in a large bowl
2. Sift the flour and mixed spice into the mixture. Mix until blended
3. Cream the butter until soft then add in the sugar and beat until light and fluffy
4. Beat in the eggs, one at a time
5. Add the glacé cherries, ground almonds and other dry ingredients into the egg mixture. Mix well
6. Add in the brandy and mix well again
7. Grease and line an 8 inch round tin, covering the outside with baking paper and securing the paper with twine
8. Pour the mixture into the tin and level with a spoon
9. Place the tin on top of a baking sheet lined with baking paper, and bake the cake in a pre-heated oven at 150°C/130°C fan/gas 2 for about 3½ hours or until a skewer comes out clean
10. Cool on a wire rack
